Collection: Recipe - Vegetarian / Vegan Chili (sin carne)

Ingredients
- 460 g (1 pack) of Ȧrta Bȯna Mexican Meal Mix
- 1 onion
- 2 cloves of garlic
- 1 red pepper
- 15 ml (1 tsp) vegetable oil
- 1 can of 400 ml diced tomatoes
- 26 g (2 tbsp) brown sugar
- 5 g (1 tsp) ground cumin
- 5 g (1 tsp) chili powder
- 125 ml (½ cup) vegetable broth
- 1 can of 540 ml red beans - drained
- ½ tsp of salt
- 5 g (1 tbsp) lime juice
Tip : use the Plant Based Ground Crumble for a higher protein version.
Instructions
- Finely chop the onion, mince the garlic, dice the pepper.
- Heat the oil over medium heat in a saucepan. Cook the onion and the garlic about 3 minutes, stirring occasionally so as not to burn them.
- Add the diced tomatoes and peppers, the brown sugar, the cumin and the chili powder. Mix everything and cook 2 minutes.
- Pour the vegetable broth, the Ȧrta Bȯna Mexican Meal Mix and the red beans that you have rinsed beforehand.
- Cover and cook over low heat 1 hour, check from time to time that the mixture remains damp enough. Add water if necessary.
- Add salt and pepper to taste. Add the lime juice, stir and serve.
Can be garnished with sour cream, grated cheese or grated vegan cheese
