Collection: Recipe - Vegetarian / Vegan Chili (sin carne)

Makes 4 servings

Ingredients

  • 460 g (1 pack) of Ȧrta Bȯna Mexican Meal Mix
  • 1 onion
  • 2 cloves of garlic
  • 1 red pepper
  • 15 ml (1 tsp) vegetable oil
  • 1 can of 400 ml diced tomatoes
  • 26 g (2 tbsp) brown sugar
  • 5 g (1 tsp) ground cumin
  • 5 g (1 tsp) chili powder
  • 125 ml (½ cup) vegetable broth
  • 1 can of 540 ml red beans - drained
  • ½ tsp of salt
  • 5 g (1 tbsp) lime juice


Tip : use the Plant Based Ground Crumble for a higher protein version.

Instructions

  1. Finely chop the onion, mince the garlic, dice the pepper.
  2. Heat the oil over medium heat in a saucepan. Cook the onion and the garlic about 3 minutes, stirring occasionally so as not to burn them.
  3. Add the diced tomatoes and peppers, the brown sugar, the cumin and the chili powder. Mix everything and cook 2 minutes.
  4. Pour the vegetable broth, the Ȧrta Bȯna Mexican Meal Mix and the red beans that you have rinsed beforehand.
  5. Cover and cook over low heat 1 hour, check from time to time that the mixture remains damp enough. Add water if necessary.
  6. Add salt and pepper to taste. Add the lime juice, stir and serve.

 Can be garnished with sour cream, grated cheese or grated vegan cheese
