Collection: Recipe - Indian stuffed peppers

Makes 4 servings

Ingredients

  • 460 g (1 pack) Ȧrta Bȯna Indian Meal Mix
  • 125 g (1/2 cup) plain yogurt or coconut yogurt
  • OPTIONAL: 400 ml (1 can) of tomato sauce or crushed tomatoes
  • 4 medium-sized peppers
  • 1 onion, finely chopped
  • 50 g (¼ cup) uncooked rice
  • 125 ml (1/2 cup) water
  • 15 ml (1 tbsp.) vegetable oil
  • salt and pepper

Instructions

  1. Preheat your oven to 180 °C (350 °F).
  2. Remove the cap from the chili peppers, seed them. Reserve.
  3. Heat a pan over medium-high heat and brown the onion in vegetable oil 3 minutes, add the Ȧrta Bȯna Indian Meal Mix, water, the rice, mix and bring to boil.
  4. Lower the heat to minimum, cover and cook 15 minutes.
  5. Add the yogurt in the mix and stuff each pepper.
  6. OPTIONAL: Pour tomato sauce or crushed tomatoes in a baking dish
  7. Deposit the peppers in the baking dish and bake 25-30 minutes.
