Collection: Recipe - Indian stuffed peppers

Ingredients
- 460 g (1 pack) Ȧrta Bȯna Indian Meal Mix
- 125 g (1/2 cup) plain yogurt or coconut yogurt
- OPTIONAL: 400 ml (1 can) of tomato sauce or crushed tomatoes
- 4 medium-sized peppers
- 1 onion, finely chopped
- 50 g (¼ cup) uncooked rice
- 125 ml (1/2 cup) water
- 15 ml (1 tbsp.) vegetable oil
- salt and pepper
Instructions
- Preheat your oven to 180 °C (350 °F).
- Remove the cap from the chili peppers, seed them. Reserve.
- Heat a pan over medium-high heat and brown the onion in vegetable oil 3 minutes, add the Ȧrta Bȯna Indian Meal Mix, water, the rice, mix and bring to boil.
- Lower the heat to minimum, cover and cook 15 minutes.
- Add the yogurt in the mix and stuff each pepper.
- OPTIONAL: Pour tomato sauce or crushed tomatoes in a baking dish
- Deposit the peppers in the baking dish and bake 25-30 minutes.
